We would have more pointless fights, and more fighters would just try and switch weight divisions as soon as they lost. I could see adding Super-Heavyweights, but it would just be classified as a freakshow by a lot of people.
One of the big things MMA fans complain about when it comes to Boxing is that there are too many weight classes and too many titles. I don't see the UFC jumping at the chance to add a bunch of Junior and Super versions of their already established weight divisions. In Boxing, it is the way it is because that's what it grew into historically. A lot of things in Boxing are imperfect, but it's also a lot harder to change because of how much history is involved. MMA has the luxury of being relatively new and can still get away with making changes and adjustments without much repercussion.
