I've been watching it for a few minutes and I think the animation is fudged a bit in the diagonal cut. I don't think the chocolate pieces would actually fit back together the way they are cut. I believe they removed the last few frames just before the pieces go back together and your eye is just assuming that it's fitting together properly. Pay attention to the second chocolate "square" from the bottom on the far left and look at how much of it has been chopped off, then look how little of it is being replaced. Yeah, after posting my comment I watched more closely. The small pieces aren't the right size to go back together correctly. It is a cool illusion though.

don't mean to rain on your parade, but the gif is not lying, it's more complicated than that it's an old trick

Well, the fudging of the animation is where it showed the chocolate squares fitting seamlessly back together. That would actually be physically impossible if you tried this in real life. There is no way the chocolate pieces would line up so perfectly with the way they were cut.
