Dont let being meek get confused with being weak. Worked in a church... yes, but also a former Marine ... and I led a few hundred people on a modern day battlefield as recently as last year. Don't think "fear" had anything to do with it. Especially with Mark. One of the best guys I know.
Im a flavor guy ... mark dry rub spices were awesome.
Mac had traditional hot wings and focused on the preparation of the meat.
